TOKYO<\/span>, Feb. 13, 2024<\/span> \/PRNewswire\/ — A special dessert<\/b> for Saint Valentine’s day to amaze who you love: an unusual-sounding Tomato Cheesecake<\/b> which is also unusually delicious. As tomatoes are botanically a fruit, sometimes they are fun to use for a dessert. And tomatoes \u2013 especially canned ones \u2013 have a high content of lycopene, a powerful antioxident that increases the level of testosterone and your libido!<\/p>\n

Tomato Cheesecake<\/b><\/p>\n

Cook 2 h<\/b> 30 min
<\/b>Serves 6 <\/b><\/p>\n

For the biscuit (base)
<\/i>120g butter<\/b>, softened
50g basil
<\/b>125g ginger biscuits<\/b>, crushed into large crumbs<\/p>\n

For the filling
<\/i>120g sugar
<\/b>4 egg yolks
<\/b>1 tsp extra virgin olive oil
<\/b>500g buffalo ricotta<\/b>, stirred
peel of 1 lemon
<\/b>a pinch of salt<\/b><\/p>\n

For the topping
<\/i>175g canned whole peeled tomatoes<\/b>, smashed with a fork
50 ml water
<\/b>1 tbsp of sugar
<\/b>I stalk of celery<\/b>, finely diced
5g salt
<\/b>1 sheet gelatine<\/b>, soaked in cold water, then squeezed dry<\/p>\n

For the tomato jam
<\/i>1 kg canned whole peeled tomatoes<\/b>, chopped, including the juices
300g sugar
<\/b>10g salt
<\/b>20 leaves of basil
<\/b>peel of 1 lemon<\/b><\/p>\n

Make the biscuit base: blend the butter and basil, then add the crumbled biscuit. Spread the mixture into the bottom and sides of a cake tin and chill in the refrigerator to solidify.<\/p>\n

For the filling, whip the egg yolks with the sugar and olive oil, then whisk in the ricotta.<\/p>\n

Preheat the oven to 175°C.<\/p>\n

Pour\/spoon the filling onto the biscuit base and bake for about 20 minutes. Leave to cool.<\/p>\n

For the topping: combine the whole peeled tomatoes, water, sugar and diced celery, cook for 8 minutes, strain then add the gelatine.<\/p>\n

Boil for a few minutes until the gelatine melts, and then strain and pour onto the cheesecake. Leave to cool.<\/p>\n

For the jam: combine all the ingredients \u2014 the canned tomatoes, sugar, salt, basil and lemon peel – in a saucepan and bring to the boil. Reduce the heat and simmer uncovered until the mixture is thick, for about an hour. Chill until ready to serve.<\/p>\n

Serve the cheesecake cut into slices with a spoonful of tomato jam alongside and a chilly glass of champagne.<\/p>\n
